Mint Brownies + Recipe

Thanks to Erin, here is the recipe!

Recipe:

* 1 cup butter
* 6 oz. unsweetened chocolate, chopped
* 3 cups sugar
* 1/2 tsp salt
* 2 teaspoons vanilla extract
* 4 large eggs, room temperature
* 1 2/3 cups all purpose flour
* 1/3 cup unsweetened cocoa powder
* 3 cups roughly chopped peppermint oreo-type cookies (approx 18)

1. - Preheat oven to 350F.
2. Line a 9×13-inch baking pan with aluminum foil, and grease lightly.
3. In a medium-large saucepan over low heat, melt together butter and chocolate, stirring occasionally.
4. Whisk in sugar, salt and vanilla, then turn off heat.
5. Whisk in eggs one at a time, waiting until each is fully incorporated before adding the next.
6. Stir in flour and cocoa powder until mixture is uniform.
7. Stir in peppermint oreo cookies and pour batter into prepared pan.
8. Crush 3-4 additional cookies finely and sprinkle on top of batter, if desired.
9. Bake for about 35 minutes, until a toothpick inserted into the center comes out with moist crumbs, but not coated with batter.
10. Cool brownies in pan for about 20 minutes, then lift brownies in the foil out of the pan and place on a wire rack to cool completely before slicing.

i'm googling this and will not stop until i find the recipe. or maybe could we just make something up and crumble oreos in the brownies?? you can't tease like that lloyd. you just can't.

I will have to try this one-- when I was pregnant- I ate anything I wanted because I rationalized that i would eat healthier after i had the baby-- now that i have had my baby- I still want to eat all those bad things- so this recipe will be perfect!

first off, those brownies look awesome and i think i will just have to make them TONIGHT! :)
second, we skipped on the ice cream at spaghetti factory because we didn't think it would be all that good!! haha
and third, i meant to comment on your post below, i think you should go for the bang! you look super cute either way but it always makes a difference when you do a more dramatic change!
and i just might have to take you up on a day full of subway riding! :)

Oh those look so good. I have been on a mint chocolate kick. For the last 4 months I only get mint chocolate chip ice cream and peppermint patties!!
